Tomato Pachadi / Tomato Chatni

Ingredients :

Tomatoes           - 3
Coriander Seeds  -  1/2tbsp
Urad dal              -  1 tbsp
Cumin Seeds       - 1/4 tbsp
Onion                  - 1
Green Chillies      - 1 or 2
Tamarind             - 3 small pieces
salt             - required


Seasoning-

Red Chilli - 1
Curry leaves - few
Cumin Seeds   -  1/2tbsp
Mustard Seeds - 1/2tbsp
Urad dal          - 1/2tbsp
oil                  -  1tbsp

Prepare Chatni now -
In a Pan, pour 1 tbsp of oil and let it get heated up. Fry Coriander Seeds, Urad dal and Cumin seeds together and keep them aside. Now fry Copped tomatoes and green chillies for 5 mins in low flame.
In a mixer, take fried Coriander Seeds, Cumin Seeds, Urad dal, Green Chill and Tamarind and little salt and grind it till soft.
Now to the mixture add fried tomatoes and grind it. Now Chop the onion into bigger pieces and add to the mixture and grind for 2 secs. Make sure that onion should be just grinded into smaller pieces. Onion should not be grinded totally(the taste differs). Take the grinded Chatni into a bowl.
Now, In a pan add oil and fry the seasoning ingredients & add this to the Chatni.



And now tasty tasty Tomato Chatni is ready to serve.

Tomato Vaadchina Pachadi

Here is a simple recipe, a mixture of flavours... This I had learnt it from my mother-in-law and I liked it and continued preparing it. Hope U too would like it!!

Ingredients -

oil          - 5-6tbsp
Tomato  -  3
Salt        - required
Tamarind Pulp     - 4tbsp
Red Chilli Powder - 1/2tbsp

Preparation -

In a pan, pour oil and heat it.
Fry tomato pieces in the oil for 10 mins in low flame.
Add Tamarind pulp, salt, chilli powder and fry it for 10 more mins in low flame, till the oil gets seperated.
Now, its ready to serve.... Chilli powder can be added as per ur spiciness.

This can be stored for 3-4 days.

Carrot Pulav

Here is an other Healthy and Tasty pulav for whoever likes rice varieties... !!!

Ingredients:

Grated Carrot   -  1 cup
Rice                 -  1 cup
Beans               -   1/2 cup
Green Peas       -    1/2 cup
Green Chilli       -    2
Pudina leaves    -   1/2 cup
Salt                   -   required
Ginger-garlic paste  - 1 tbsp
Onion                - 1
Cashew             -  few

Masala Ingredients:

Cloves - 3
Cinnamon  - 1
Cardamom - 2
Bay Leaf    -  1

Preparation:

In the cooker pour 6 tsps of oil and let it get heated up.
Put the grated carrot in the oil and fry it. After that add Masala Ingredients, chopped beans, Green Peas, Green Chillies, Ginger-garlic paste and fry for 2 mins.
Now add rice and mix it evenly. After 2 mins add required water, salt, pudina leaves and cook it.

In a pan fry chopped onions and cashew nut seperately.


Garnish Carrot pulav with Fried Onion and Cashew and taste it... Yummy!!!!

Pulav can be served with Raita or some Gravy ...

Paneer Jilebi

Mmmmm Yummyyy!!! Paneer Jilebi....
I learnt it from a Telivision show... I found it interesting and tried it out... You can prepare it whenever you feel like eating jilebi.... Who ever likes paneer and wants to have paneer as a sweet can definetly try this recipe.

Ingredients:

Paneer   - 200gms
Maida    - 4 tsp
salt       -  a pinch
Sugar    -  1 and 1/2 cup
Water   -  2 cups
Cardamom  -  1

Grate the panner and take it in a bowl. Add maida, salt to it and mix evenly and mould it into dough. Keep the mix aside for half an hour.

 






In the meanwhile prepare the Sugar Syrup.
In a bowl, add water and sugar and let it boil for 15 mins. This syrup should be of medium thickness.
Once the syrup is ready add Candamom powder to it and mix well.



 
Take small portions of paneer mix and mould it into a small Jilebi shape. Deep fry them and put it in the Sugar Syrup.  Soak the Jilebi's in the syrup for 15-20 mins. Now you can take out the Jilebi's from the sugar syrup and serve it.



Fried Gram Chatni

This is the regular Chatni I prepare as a combination for all breakfast varieties. For Dosa, Idli, Upma, bonda, bajji... with everything we can have it.

Ingredients:

Friedgram           -   1/2 cup
Green Chilli         -   2
Tamarind slices   -  2
Salt                    -  required
Coconut              -  few pieces (pachi kobbari)

Thalimpu Ingredients:

Urad dal           -  1/2tsp
Red Chilli         - 1
mustard seeds - 1/2tsp
Cumin Seeds    -  1/2tsp
Curry leave      -   few


In a mixer jad add Fried gram, Green Chillies, Salt, Coconut, Tamarind and grind it till soft.
Now, add little water and grind to make a fine paste. If required you can add some more water. Quantity of water depends on the thickness of the chatni you wish to have.

Fry thalimpu ingredients in oil and add thalimpu to the Chatni and serve it.



 

Onion Chatni

This Chatni is a good combination with Dosa varieties and with Idli. I had learnt this Chatni from my mother-in-law. I liked it and continued doing this at home... I hope you too would like this!!!

Ingredients:

Onion                  -   1 big
Red Chilli Powder - 1 tsp
Salt                     -  1/2 tsp.. might be little more
Sugar                  -  1 and 1/2 tsp

Thalimpu Ingredients:

Urad dal           -  1/2tsp
Red Chilli         - 1
mustard seeds - 1/2tsp
Cumin Seeds    -  1/2tsp
Curry leave      -   few

Prepare It this way -

In a mixer Jar add onion, chilli powder, salt and grind it till soft.
Take the chatni in a bowl and add sugar to it and mix well.
This stays for 3-4 days. Before using the chatni, fry thalimpu ingredients in oil and add thalimpu to the Chatni and serve it.

Pesara Kattu / Moong dal Rasam

Moong dal is a great source of complex carbohydrates, fiber and protein. Regular consumption of moong dal helps to reduce cholesterol. Moong dal promotes heart health also.. and there are many more benefits of having moong dal regularly. This recipe is very easy to make. This can be given to kids instead of giving rasam daily. Tasty dish to prepare!!

Ingredients -

Moong dal      -  1/2 cup
Green Chillies -  3
Garlic Cloves  -  4
Ginger pieces -  1 tsp
Water            -  4 cups
Turmeric        -  a pinch
curry leaves    -  few
Red Chilli         - 1
cumin seeds   -  1/2 tsp
mustard seeds - 1/2tsp
Urad dal           -  1 tsp
Lemon             -  1



Try it this way - 

Soak moong dal in one and half cup of water for 30 mins and cook it with that water till soft.
Peel ginger and cut it into small pieces. Peel garlic too. Cut Green Chillies to half.
In a bowl, pour oil, add Red chilli, mustard seeds, cumin seeds, urad dal, curry leaves and fry it.
Once they gets fried add green chillies, ginger pieces, garlic cloves and fry them too.
Now, add 4 cups of water and wait till the water gets boiled.
Once the water boils, add cooked moong dal to it and salt and let it boil for 15 mins.
Add Lemon juice and garnich with coriander leaves :)

Moong dal Rasam is ready now!! So simple...

Erra Kandi Pappu Kichdi / Red Lentils Kichdi

Lentils replenish iron, and they are more fibre content. Red Lentils are rich in protiens.
Children like this food much.. Tasty to eat!!

Ingredients -

Rice           - 1 cup
Red Lentils - 1/2 cup
Tomato      -  3
Green Chilli - 3
Onion         - 1
Ginger Garlic Paste - 1 tsp
Pudina        - 1/2 cup
Salt            - required
cinnamon    -  1
cloves         -  3
oil              -   3-4 tsps  
Water        -    For Rice 2 cups and for Red Lentils 1 cup

Soak Rice and Red Lentils in a bowl for 1 hr
Keep everything ready and now its easy to prepare.

Preparation -

This can be directly cooked in a pressure cooker.

Pour oil and let it gets heated up.  Add Cinnamon, Cloves and fry it.
Now add finely chopped onions and green chillies and fry it till the onion loses its raw flavour.
Add Ginger-Garlic paste and fry it to add good smell and taste to the dish.
Add chopped tomatoes, a pinch of turmeric and boil it for 2 mins.
Add the required quantity of water, Pudina and salt (it might be around 1 tsp) and boil for 5-10 mins.
Now add Rice and Red Lentils and cook it.

Mint Lemon Juice

Mint leaves are very refreshing.. If you have this juice 'warm' in 'cool winter' you will feel so refreshing ....
Mint is helpful during colds, flu, etc. I heard that if a person with blood pressure smells mint leaves daily, it reduces the blood pressure and tension. Ginger also helps in clearing throat and helps in good digestion.

Ingredients:

Chopped Pudina  -  1/4 cup
Chopped Ginger  -   2 tsp
Lemon juice         -   2 tsp
Sugar                   -   1 tsp
salt                       -   little
Water                  -   1 glass

Prepare the Juice now...

In a bowl, add a glass of water and let the water boil.
Now add pudina leaves and ginger and let it boil for 10 mins.
Now add Lemon juice, salt and sugar and stir well.

So simple, the juice is ready to serve!!!



This juice can be taken either as hot or as cold according to our wish.

Palak Rice / Spinach Rice

Palak Rice is an easy to prepare dish. You can prepare an yummy dish quickly. Palak has iron contents and is good for health. Along with any iron content food if you take vitamin C, then the body absorbs iron completely. Heard it so... People say palak and tomato should not be taken along with. This combinations is not good for health. Remember!!

Ingredients:

Rice  -   1 cup
Oil    -  6 tbsp
Ghee -   2 tbsp
cumin seeds   -   1/2 tbsp

Green Chillies  - 4
cloves - 4
green peas - Fresh
Onion  - 2 /3 
Ginger-Garlic Paste - 2tbsp

Palak  -   2 bunch
Potato -  2 
Salt    - required
Pepper powder - a pinch

Cook It This Way:

Cook the rice and keep it aside. Add little bit of salt to the cooked rice.
Cut the potatoes into medium size pieces and boil it by adding salk and a pinch of turmeric.
Now, In a pan, heat oil and ghee. Initially put the cumin seeds, green chillis, cloves, green peas and fry it.
Add finely chopped onions and fry it till they turn into golden color.
Once the onion is fried, add ginger-garlic paste and fry it.
Now, add the finely chopped palak leaves(cut into very small pieces) and fry it for 5 mins.
Add little bit of salt to the above mixture.
Once palak leaves are fried, add the half boiled potato pieces and fry it for a minute.
Add the cooked rice to the curry and mix it well. you can add pepper powder if you wish to have it a bit more spicy.

Chit Chat Corner

Saggubiyyam Punugulu

This is Yummy Snack!! I like it most. So soft while eating. To whom ever I serve this snack, they like it most. By looking itself you will feel like preparing it...

Ingredients  -

Curd  -  1 cup
Saggubiyyam    -  1/4 cup
Green Chillies   -  3
Salt                  -  required
Ginger             -   a small piece
turmeric          -   a pinch
Rice Flour        -   4 -5 tsps, depends ..
Onion              -   1
Curry leave      - optional

Soak Sabudana/Saggubiyyam in curd before 3 hrs
Prepare the mixture -
       
Grind green chillies, ginger, salt in the mixi and keep the paste aside.
Now take the curd with Sabudana into a bowl. Add the green chilli paste, turmeric, Chopped onion pieces, curry leaves and mix well. Once the taste is perfect, add rice flour spoon by spoon to the mixture. Once the mixture becomes tight enough then stop adding rice flour.


In a pan pour oil required to deep fry. Take small balls of the mixture and deep fry it.
Fry it till it turns to reddish brown color. Now its ready to eat .....



Menthi Pulusu

This is a simple dish. We can store the mix and prepare it when ever you wish.

Ingredients -

Fenugreek         -  1/4 tsp
Rice                  -  4 tsp
Onion                -  1
Chilli powder     -   1 tsp
Salt                  -   required
Tamarind slices - 10
Red Chilli          -  2
Mustard seeds   -  1 tsp
Cumin seeds      -   1 tsp

To prepare the powder -

In a pan, without any oil, fry Fenugreek and after that add rice and fry both.
Once this mixture gets cooled, put it in a mixi and grind it till soft.

Rasam Preparation -
Soak Tamarind slices in 2 cups of water before 10 mins and extract the pulp. In a bowl, add oil, add Red chilli, mustard seeds, cumin seeds and fry it. Now add the tamarind juice, salt, turmeric, Chilli powder, finely chopped onion and let it boil.
Boil it till the onion loses its raw flavour. Now add 2-3 sps of the above prepared powder and a small piece of jaggery. Boil it for 5 mins.

Avalakki Palak Pakodi

Try it you will definetly like this combination. Crispy and soft!!

Avalakki       - 1 cup
Besan Flour - 1/2 cup
RiceFlour     -  4 tsp
Ginger garlic paste - 1 tsp
Garam masala   - 1/2 tsp
Palak               -   2 cups
Green Chillies -  2
Baking Soda   -  a pinch
Salt                   -  required

Try it this way -

In a bowl mix all the ingredients.
In a pan, pour oil for deep fry.
Now sprinkle the mixture in the pan like pakodi to deep fry.
Yummy!!!
